This deep fried Mochiko Chickenis one of the locals favorite in the Island of Hawaii. Simple dish yet super good. Made of boneless chicken thighs, marinated with rice flour, cornstarch, sugar, soy sauce, eggs, green onions, sesame seeds and garlic. This is so good, definitely broke the mouth. Oh brah so ONO and delicious.

Homemade foods are the BEST! Mitsu-Ken garlic chicken is one of my favorite to eat when we live in the islands. The skin is sooo crispy and full of flavor. And that Sweet Savory and Garlicky Sauce oh man so ONO. Definitely burst in your mouth! I made this to satisfy my cravings. This is the first time I make it, and once again it came out good. I never limit my ability to make good food for my family and friends. I use chicken thighs I deboned it myself cut in 3 pieces dredge in seasoning flour and deep fry till lightly golden brown and tossed it with the garlic sauce mixture.
I made this dinner for me and my husband because I promise to make him a healthy meal. So I came out with this Honey Mustard Baked Chicken. For the honey mustard dressing I use; 4 tablespoons stone ground mustard and 2 tablespoons honey and mixed them together. For the chicken breast I seasoned with garlic salt, onion powder, paprika and ground black pepper. Preheat over to 400 degrees. In a baking pan place the chicken and pour the mustard dressing onto the chicken cover with foil and bake it to 25 - 35 minutes depends on the size of the chicken. Use a thermometer to check if the chicken is fully cook should be 165 degrees. And toasted with sliced almond and sprinkle ontop of the chicken. This is the first time I made this and it came out good.
Before I usually used my homemade dry rub to season the chicken and let it seat overnight to make sure all the ingredients will get into the meat. But this time I decided and follow my instinct to marinate overnight instead, with my homemade sweet & savory sauce . I should say this is definitely a winner. So tasty, moist and delicious. Smoked the chicken for 4 hours. The long is worthed and satisfying.
As all you know cooking is my number passion and my stress reliever. When I'm cooking I feel relief, happy and thankful. Never I stop making good food for my family and friends. When I made this "Chicken Inasal" for the very first time. (Challenge myself in things that I'm not familiar with, is what make me more stronger and believing I was born to be a good cook). This is very famous in the Philippines and here abroad. The key to having a good "Chiken Inasal" you need to have a good marinate sauce in order for the chicken to taste good, a patience in grilling and cook it to perfection. This is out of my comfort zone but I'm happy and contented with the outcome and I'm glad I made it. So good and delicious definitely broke the mouth.
Chicken Adobo - is braised in vinegar, soy sauce, fresh garlic, fresh ginger, bay leave and whole peppercorns or ground black pepper. This dish is very popular in the Philippines especially in Ilocos region. Adobo means the marinate or sauce. I marinate the chicken with soy sauce, vinegar, garlic powder, onion powder and ground black pepper. You can marinate for 2 hours before cooking or overnight. For myself I prefer to marinate overnight to make sure all that goodness marinate sauce get into the meat and make it taste so delicious.
I made this dinner for my beloved family which I called it ” Creamy Chile Verde Pasta with Chicken” not your typical pasta. But I’m telling you this is so good. Making something or experiment a dish i haven’t made before…. All the components i used for this dish are what i already have from my pantry & fridge. I just want to make dinner for my family. When my creativity strike and my brain tell me to make food out of nowhere. Damn i always executed. Never limit your ability to do different and discover what your passion are in life.
Baked Stuffed Breast Chicken with Roasted Red Pepper, Eggplant and Garlic Puree and Sauteed Broccoli10/16/2018 Made this dinner for my husband. One night he asked me if I can make him a healthy dinner. Of course I can’t say no to him. I always impressed him with my homemade food. And out nowhere I came out with this easy meal. So I made him a stuffed baked breast chicken with sauteed broccolini and for the sauce is made of roasted eggplant and red bell pepper.
I was inspired with my chica who always make mexican foods. So one night my husband challenge me to make dinner using ingredients that we already have from our pantry and refrigerator. And I came out with chicken Enchilada with chili verde. I’m impress with myself this came out good. For the chili verde I used the one you bought at the store ( I sauteed onion and garlic then add the chili verde. I add chicken bouillon for flavor) and for the chicken I used chicken breast seasoned with enchilada seasoning then baked (quick and easy). Once the chicken is done I shredded it, wrapped with corn or flour tortilla with mozzarella and cojita cheese. In a baking dish lay out the chicken enchilada pour chili verde then springkle with mozzarella cheese and baked it to 350 degrees for 30 to 45 minutes. Serve and garnish with more cojita cheese.
Sometimes when husband want a healthy dinner meal I make sure to serve him what he requested. So made him Baked Chicken Breast seasoned with salt & fresh ground black pepper, sage, rosemary and garlic. For side I made a roasted asparagus and tomatoes. As they "a man's heart is through his stomach".
