When your friends are so addicted watching Korean Drama expect the unexpected. Korean food it is. I got inspired with my good friends Jeannie Solomon, Christhel Urro and Joyce Stoddard. Making Tteikbokki - Korean Spicy Rice Cake for the first time is successful. I'm so glad to have such a good family and friends who always inspired and believe in me . Cooking make me feels good. And yes, we always order this dish everytime we go eat at Korean restaurant.

Cassava Suman or steamed Cassava wrapped in banana leaves. This kakanin is one of my favorite snack or merienda back in the Philippines. Growing up I used to help my late grandmother making this. She let me grated the Cassava or Yucan roots then she put all the ingredients then we wrapped in banana leaves. Ingredients to make this delicious kakanin; 16oz frozen cassava (defrosted) 1 cup fresh grated coconut or shredded young strips coconut, 1 cup pack brown sugar, 1 cup glutinous sweet rice and banana leaves and melted butter or cooking spray. Steamed for 45 minutes to 1 hour.
Teriyaki Beef Kabob perfect for summer barbecue with family and friends. This marinated sauce is made from scratch. Aloha Soy sauce, fresh ground black pepper, fresh garlic, pineapple juice ( i run out of pineapple juice so i substituted with orange juice), brown sugar to give that carmelized texture on the meat and granulated sugar. For the meat I used Beef chuck short ribs, you can use Ribeye, Sirloin or TriTip. For the vegetables I used green and red bell pepper, sweet onion or red onion and fresh pineapple for sweetness and tangy taste to it. You may use different vegetables you desire.
Note: I marinate the beef overnight to make sure all that goodness from marinated sauce soak up into to the meat and gives you that ONO flavor. Grilled to perfection moist and delicious, definitely burst on your mouth. Inihaw na pork liempo or grilled pork belly is very popular dish or pulutan (appetizer) in the Philippines. What make the meat so tasty is the marinate sauce (soy sauce, vinegar, fresh lemon juice, salt & black ground pepper, fresh minced garlic, banana ketchup & sugar. The first time I make this was a hit. So simple yet so tasty and delicious. And grilled to perfection.
This open faced Portabello mushroom sandwich is a must try. Healthy yet delicious. Made of grilled Portobello mushroom, swiss cheese, tomato, sweet onion, fresh basil and a dash of salt and black ground pepper. Perfect thing to eat, to get your summer body ready.
As all you know cooking is my number passion and my stress reliever. When I'm cooking I feel relief, happy and thankful. Never I stop making good food for my family and friends. When I made this "Chicken Inasal" for the very first time. (Challenge myself in things that I'm not familiar with, is what make me more stronger and believing I was born to be a good cook). This is very famous in the Philippines and here abroad. The key to having a good "Chiken Inasal" you need to have a good marinate sauce in order for the chicken to taste good, a patience in grilling and cook it to perfection. This is out of my comfort zone but I'm happy and contented with the outcome and I'm glad I made it. So good and delicious definitely broke the mouth.
Chicken Adobo - is braised in vinegar, soy sauce, fresh garlic, fresh ginger, bay leave and whole peppercorns or ground black pepper. This dish is very popular in the Philippines especially in Ilocos region. Adobo means the marinate or sauce. I marinate the chicken with soy sauce, vinegar, garlic powder, onion powder and ground black pepper. You can marinate for 2 hours before cooking or overnight. For myself I prefer to marinate overnight to make sure all that goodness marinate sauce get into the meat and make it taste so delicious.
Ginataan Shrimps or Shrimps cooked in coconut milk. This is so ONO. I love seafoods and Shrimps Ginataan is one of my favorite. Sauteed in shallots, fresh ginger, fresh garlic, black ground black pepper, thai chili pepper to add some heat and shrimp paste. Simmered in coconut milk and cooked to perfection. I added fresh grated coconut for natural sweetness and Sweet green chili peppers for texture and vibrant colors.
This delicious BIBINGKA is my mom's recipe. I usually make this for potluck or any party I'm attending. My family and friends talked about all the time how delicious it is. Thanks to my loving mother by sharing her recipe to me. Believe it or not everytime I called her and asked her how to make this or that (particularly in Filipino kakanin) ? Her answer to me "I thought you're a culinary graduate" Chelle! She definitely has a sense of humor. And I love her to death.
