I'm so grateful and thankful to cater their wedding. On March 28, 2018 they finally sealed their love to one other witnessed by there family and friends. The venue is very beautiful (like the bride itself) which is "The Lodge" at Traverse Mountain, in Lehi. On the menu are; Caesar Salad, Pork Lumpia, Beef Caldereta, Creamy Chicken Fettuccine Alfredo, Mixed Fruits, Non-alcoholic Sunrise drinks and Infused water. To Jeng and Joel thank you very much for trusting me to provide the food at your wedding.
This is by far the most beautiful setup we did. Unicorn birthday theme with Hailey's 2nd birthday last December 29, 2018. Part of my catering service is to help my customers put up their decorations and make the desserts table very presentable and to make sure it goes with the theme. I have fun doing all these things, it feels like I went back to be a kid again and it gives me more ideas to play with my creations. Note to myself not to forget take picture with all the foods and the guests.
My version of Chicken Macaroni Salad. This is the first time I make this and it came out really good. Too my surprised some of my picky friends love it! Chicken Macaroni Salad is very popular in the Philippines as a side dish. Easy to make and prepare. Ingredients: 1 - Can Condensed Milk (14 oz 396g) 1 - 8 oz ( 226g )Cream Cheese room temperature 1/2 - chopped candied pecan or walnuts (optional) 1/2 - Cup parsley - chopped (optional) 1/2 - Cup red onion diced 1 - Cup finely shredded Carrots 2 - Cook chicken breast diced ( I used 2 breast of the rotisserie chicken) 1 - Cup raisins or cranberry 2 - Cup Mayonnaise 2 - Cups Ambrosia, Fuji or Honeycrisp Apples diced 1 - Cup Celery diced 1 - Cup shredded Eden Cheese + 1/4 cup for garnish Note: If Eden cheese is not available you can use mild cheddar cheese instead. 1 - Box Elbows Macaroni (1 lb, 454g) Salt and Ground black pepper - to taste Cooking Instructions: 1. Prepare all your dry ingredients (Mise en place). 2. Cook the elbow macaroni ( drained and set a side). Make sure before you incorporate or add the pasta to rest of the ingredients is cold not hot nor warm. 3. In a bowl combine mayonnaise, cream cheese and condensed milk whisk it till all well blended and free of lump (silky and velvety texture) season with salt and ground black pepper. Cover with plastic and place it in the refrigerator. 4. In a big bowl combine all the dry ingredients. 5. Get the sauce from the refrigerator added to the rest of the ingredients, tossed it well to make sure that all the ingredients is well coated with the sauce. Adjust seasoning by adding salt and black pepper. 6. Chill about 2 hours before serving. Transfer in a serving platter and garnish with the remaining cheese. 7. You can make this ahead of time too. Hosted a baby shower for our good friend Joyce last November 18, 2018. We are all excited to be part of this wonderful event. Husband and I are such a good team; he is in-charge with the games and I in-charge with decorations and foods. I think we did a good job putting all of this for Dave and Joyce. Guests had fun and definitely enjoy all the games that my husband put together.
Celebrating our Filipino Festival dba Philippines Independence Day " is an annual festival held annually in Salt Lake City, Utah. This event is going on now for 6 years. Filipinos love to celebrate anything big or small. So when my good friend and mare Jeannie passed her US Citizenship test and attended her U.S. Citizenship ceremony, we decided to eat at Tres Hombres Grill and Cantina to celebreate. This a Mexican restaurant located at 3298 Highland Dr, Millcreek, UT 84106. After our simple lunch celebration we decided to grab a desserts at Délice Bakery & Café located at 2747 State St, Salt Lake City, UT 84115. We are very satisfied of what we ate. But most of all the bonding we had together. Friends that eat together, stay together. CONGRATULATIONS JEANNIE!
