Healthy yet delicious. This breakfast sandwich is to die for. Toasted wheat bread, Fresh sliced tomato & avocado seasoned with salt and fresh ground black pepper topped with over easy egg. I love being my husband personal chef and at the same time I make sure that he is on track with his diet.
When it comes to foods I always make sure to create something good for my Family. This grilled Pork Chop with Pesto Sauce with Sautéed Oyster Mushroom is very easy to make. I marinated the pork chopped overnight with pesto sauce (you can use the one from store or you can make your own pesto). Grilled till pork temperature is 145 degrees. For the oyster mushrooms I just sauteed with oil and unsalted butter seasoned with salt and black ground pepper. I love creating food and making up my own recipe.
Pancit Palabok is one of my favorite to eat so easy to make and taste delicious. Made of rice noodles topped with shrimp sauce, shrimps, smoked fish flakes, crushed chicharon and boiled eggs and garnish with scallion. For the sauce you need to used a shrimp stock (you can make your own stock by using the shrimps head and shells). Sauteed onion and garlic then add the achuete/annato powder for color. Add the shrimp stock thicken with constarch and water seasoned with salt and black ground pepper.
This Sweet and Sour Fish Dish is very easy to make. For the fish I used Cod cut in 1″x2″ dipped in egg washed & dredged in seasoned all-purpose flour then baked. And for the sauce I used pineapple juice, ketchup, sugar, Salt and ground black pepper to taste. To thicken the sauce just cornstarch and water. For the vegetables; carrots, red and green bell pepper, Pineapple, Sweet onion and scallion for garnish.
One night we have family came over for dinner so I decided to make this kind the fancy dinner for my family just to impressed them. New York Steak with Mashed Potato and Gravy, with roasted Carrots and roasted Asparagus.

Made this dinner for my husband. One night he asked me if I can make him a healthy dinner. Of course I can’t say no to him. I always impressed him with my homemade food. And out nowhere I came out with this easy meal. So I made him a stuffed baked breast chicken with sauteed broccolini and for the sauce is made of roasted eggplant and red bell pepper.
Every year Husband and I we always entered the Grilled Cheese Challenge. So this year 2018 I made a Creamy Alfredo Fettuccini with Lobster, Gruyere Cheese topped with microgreens in Ciabatta Bread. I love to create something out of my comfort zone. This is the first time I made it and definitely good.
Ginataan Alimango with vegetables or Crab cooked in coconut milk with vegetables. This dish is very easy to make. One of my favorite food to eat. Seafoods LOVER! Sauteed onion, garlic and ginger for 5 minutes then add the coconut milk seasoned with fish sauce add some thai chili pepper for some spiciness (optional). Then add the crab and simmered for 10 - 15 minutes, add the squash and green beans cook for 5 minutes then last but not the least add the baby bok choy cook for additional 2 minutes make sure to adjust seasoning if necessary.
